Course Description

This course is an introductory exploration of the universal beverage of choice… BEER!

Beer’s contributions to civilization are often overlooked. This course aims to draw forth awareness of the aspects of beer that truly make it special: its impact on society, the cultivation of ingredients, its production, its range of styles and, most importantly, its taste!

June 4: From Then to Now

This session explores the origin story of beer (perhaps the origin story of civilization itself), and the foundation for beer as we know it today. Sip through time and discuss topics ranging from Sumerian drinking straws to the birth of the pH scale and learn how beer became the world’s greatest drink.

June 11: The Ingredients, The Flavor

This session covers the ingredients of beer and how they function. Learn the language used to describe each attribute of the beer we enjoy and where those flavors come from. What makes a lager so refreshing? What makes a beer taste like bananas or bubblegum?

June 18th: The Partnership of Food and Beer – A Pairing Event

This session will explore why beer makes food taste better and how to create the perfect pairing. We will use the qualities in different beers to help amplify, complement, or contrast with different flavors of food and discuss how beer can also be an ingredient itself.

June 25: The Technology, The People, The Story

Roughhouse Brewing, 680 Oakwood Loop, San Marcos

Meet at the brewery at 6:00pm

This session will be a field trip to Roughhouse Brewing! We’ll tour a working brewery and get up close and personal with the equipment that makes it all happen. With Roughhouse’s in-house brewer, we’ll discuss lager, farmhouse ale, and spontaneously fermented beer in an environment that proves the worth of all the effort and explains why beer is life!

Presenter: Mike Meier, General Manager, Roughhouse Brewing

Mike’s appreciation for craft beer began while gathering geophysical data from a volcano. As seismic instruments recorded vibrations from the earth, he was in a nearby town exploring different beer styles and gazing into Oregon’s Deschutes River. Mike subscribes to the idea that beer has evolved from a means of sustenance to a medium of edible, ephemeral art that is the focal point of a positive experience.
